Ingredients:
- 5-6 sausages
- 1 finely chopped onion
- 4-5 curry leaves
- 1 tablespoon ginger garlic paste
- 5-6 red tomatoes cut in very small pieces
- 1/2 cup tomato puree
- Some black pepper
- 2 chopped green chillis
- Salt according to taste
- Sugar (it is to cut the acidity of the tomatoes.)
- Oil to fry
- Finely chopped coriander leaves
Method:
- Fry the sausages in a saucepan. Keep aside.
- In a saucepan, add 2 tablespoons of oil.
- Add the onion and ginger garlic paste. Let the onions fry till moist.
- Add the curry leaves and chillis.
- Let it roast for around 20-30 seconds.
- Add the fresh tomatoes and let it cook for around 5-8 mins.
- Now add the tomato puree. Cover and let it cook for around 10 mins.
- Add the sugar, salt and black pepper and let it simmer for around 2 more mins.
- Cut in sausages in small pieces and add it to the tomato sauce.
- Mix well and let it simmer for some 10 mins.
- Remove from heat.
- Sprinkle with coriander leaves.
Enjoy the Rougaille with a bread, rice or farata. In which ever way.. it will be a treat! Bon Apetit!
