Rougaille Saucisse

Ingredients:

  • 5-6 sausages
  • 1 finely chopped onion
  • 4-5 curry leaves
  • 1 tablespoon ginger garlic paste
  • 5-6 red tomatoes cut in very small pieces
  • 1/2 cup tomato puree
  • Some black pepper
  • 2 chopped green chillis
  • Salt according to taste
  • Sugar (it is to cut the acidity of the tomatoes.)
  • Oil to fry
  • Finely chopped coriander leaves


Method:

  1. Fry the sausages in a saucepan. Keep aside.
  2. In a saucepan, add 2 tablespoons of oil.
  3. Add the onion and ginger garlic paste. Let the onions fry till moist.
  4. Add the curry leaves and chillis.
  5. Let it roast for around 20-30 seconds.
  6. Add the fresh tomatoes and let it cook for around 5-8 mins.
  7. Now add the tomato puree. Cover and let it cook for around 10 mins.
  8. Add the sugar, salt and black pepper and let it simmer for around 2 more mins.
  9. Cut in sausages in small pieces and add it to the tomato sauce.
  10. Mix well and let it simmer for some 10 mins.
  11. Remove from heat. 
  12. Sprinkle with coriander leaves.
Enjoy the Rougaille with a bread, rice or farata. In which ever way.. it will be a treat! Bon Apetit!
