Kulfi ( Indian Ice Cream)


Ingredients for 2 kulfis:

  • 6-10 tablespoons of milk
  • 1 tablespoon sugar
  • Grated Coconut
  • Crushed Almonds and Pistachios
  • 1-2 strands of saffron


Method:

  • In a saucepan, boil enough water to fill 2 plastic cups which will hold your kulfis. 
  • add the milk, sugar and saffrons. 
  • Mix well to prevent any lumps.
  • add some grated coconut and some pistachios and almonds.
  • Bring to a boil.
  • Remove from heat and let it cool to room temperature.
  • In the 2 plastic cups sprinkle some grated coconut and pistachios.
  • Pour the milk mixture in the cups.
  • Add a bamboo stick to both of the cups.
  • Let them set for a minimum of 8 hours in the freezer.
  • De mould the kulfis and sprinkle with some nuts.
